Sarah’s CBD Kitchen: Kickin’ Guacamole

Guacamole is probably my favorite thing in the world (besides peanut butter, but that’s a different story). The fact that I can actually eat avocados and guacamole is getting me through my very first Whole30 with ease. I am riding the wave of guac all the way to the finish line!

Anyways, that’s enough silly metaphors for one day. Moving on.

This recipe has a kick to it from the jalapeno. If you don’t want it to have as much as a kick, deseed the jalapenos before dicing. If you want no spice, you can substitute with bell pepper. If you REALLY want to kick it up a notch, feel free to add a pinch of cayenne.

This is a flavorful, chunky version of guacamole. I love a good chunky guac’ with delicious bits of diced onion, avocado, and jalapeno! The chunkier, the better! It tastes crisp, fresh, spicy, and has a hint of relaxation with the CBD isolate added in. A perfect combination. You can use it on pretty much anything, but to keep it Whole30 compliant, you can use it on burgers, fish, dipping veggies, in salads, or just go at it with a spoon like I do! Just try not to devour the whole bowl in one sitting, unless you want to take a nap.

For this recipe I used 60mg of CBD Isolate from Green Garden Gold. It will make 4 generous servings, or 8 small, appetizer size servings. If you want everyone to have about 15mg of CBD, double the CBD to 120mg if you do the 8 small servings. Because the CBD doesn’t have a flavor to it, you can adjust the amount up or down depending on your needs. CBD is all about finding what works for you, so feel free to experiment with your amounts.

Ingredients:

 

2 ripe avocados

⅓ cup finely diced jalapeno (deseeded for less spicy, seeds in for a kick)

½ cup finely diced red onion (about half of the onion)

2 clove garlic, minced

1tbs chopped cilantro

1/4tsp pepper

¼ tsp salt

Juice from 1 lime

60mg Green Garden Gold CBD Isolate

Garnish:

 

Lime zest

Cilantro leaves

Sliced jalapeno

 

Directions:

 

In a food processor, combine the flesh from 1 avocado with juice from half of a lime, and sprinkle in your 60mg of CBD Isolate. If you need to stop and scrape a few times, do so. The key here is to get the CBD to combine as evenly as possible with the avocado. Once you have a fairly smooth consistency, scrape all of your avocado mixture into a medium bowl. Add your remaining avocado flesh, and juice from your remaining lime half. Mash it all together, it’s ok if some of your avocado is chunky, you just want to make sure everything is well combined. After you reach the consistency you are looking for, add in your jalapeno, red onion, minced garlic (I use a garlic press), chopped cilantro, salt, pepper. Mix well so the isolate is incorporated throughout. Top with a garnish of sliced jalapenos, lime zest, and cilantro.

For best flavor, refrigerate for at least an hour, though you can serve immediately.

Relax, and enjoy your kickin’ guacamole! Just try not to eat the whole bowl yourself. Guilty.
